Taste and texture

Galbigui means grilled rib meat cooked over charcoal or on a grill. This guide focuses on soy-marinated beef ribs, although a restaurant's galbi may be pork. Meat type and seasoning together define the dish. Soy sauce, sugar and garlic season the beef, with grilled aromas added at the surface.

Beef ribs can be butterflied along the bone to spread the meat into a thinner sheet. Rather than grilling a thick lump, the attached flesh is opened out, then cut into smaller pieces after cooking. Its apparent width or the number of pieces on a plate therefore does not directly show the cut or quantity.

LA galbi is sliced thinly across the bones, leaving several small bone cross-sections in a long strip. This differs from meat opened around one bone. Both can use similar soy marinades, so LA describes a cut rather than necessarily a different flavor. Cutting direction and thickness affect portion shape, bone removal and chewing.

Marinades combine soy sauce, sweeteners, garlic, onion, ginger, sesame oil and pepper. Grated pear supplies gentle fruit sweetness and is used to tenderize; apple is an alternative. Fruit is not compulsory and does not make fruit-like sweet-and-sour flavor the focus.

The prepared ribs are marinated and then grilled, emphasizing their browned surfaces. Galbijjim instead emphasizes meat softened in liquid and braising sauce. Grilling cooks one side and then the other, whereas braising uses moisture in a pot. This helps distinguish the textures when both appear on a menu.

Gas grills, pans and oven broilers are alternatives to charcoal. Marinated ribs therefore do not all have identical smoky aromas. Charcoal foregrounds grilled aroma; griddle versions offer surface seasoning alongside meat juices. Tongs and scissors help divide the spread-out ribs into manageable bites.

Soy-marinated galbi first tastes sweet and salty, followed by savory grilled beef. Some versions emphasize sweetness, others garlic or pepper. Brown color alone does not indicate saltiness; sauce composition and how much remains on the surface matter. Chili heat is not the main flavor as it is in a gochujang stir-fry.

Tender and firmer portions coexist. Meat close to the bone can feel springier than an opened-out slice, so the entire rib is not necessarily meltingly soft. Thin LA galbi changes the thickness of each bite but retains several small bones. Bone handling remains part of either cut.

Lettuce or perilla wraps add leafy texture and aroma, while ssamjang or garlic changes the bite again. As the meat is already seasoned, a generous amount of ssamjang can pile on saltiness. Rice lets you distribute the sweet-salty meat across milder bites.

Unmarinated saenggalbi and salt-seasoned galbi should be distinguished from soy-marinated ribs. They do not center on a sweet-salty marinade. The choice depends on whether you want the meat itself foregrounded or accompanied by sweet soy seasoning; this guide's sweet-salty description applies particularly to marinated beef galbi.

  • For a sweet-salty flavor, check for ribs marinated in a soy-based sauce. Saenggalbi is unmarinated, while salt-seasoned galbi brings the meat flavor forward. The seasoning changes the balance of sweetness and saltiness even when the beef cut is the same.
