Hobak injeolmi adds pumpkin flavor to glutinous-rice cake. This guide focuses on versions coated in castella crumbs, such as Changeok’s product. Chewy rice cake sits beneath loose yellow crumbs, creating different exterior and interior textures. The castella surrounds the surface rather than forming a cream filling, so some crumbs can fall away when a piece is lifted.
Injeolmi begins with cooked glutinous rice that is worked or pounded into a cohesive mass. Maangchi describes both the traditional steaming-and-pounding method and a home method using rice-flour dough cooked in a microwave before pounding. This helps explain its smooth, elastic texture compared with simply pressing intact rice grains together. Pumpkin and a coating create another flavor of injeolmi.
Pumpkin can be incorporated in different ways. Hosumom steams and finely processes sweet pumpkin, mixes it with wet glutinous-rice flour, and steams the mixture. Cappuccino uses pumpkin powder with rice flour and water. Cooked pumpkin and powder contribute different moisture and proportions, so similar yellow colors do not imply the same method.
Castella crumbs come from cake that has already been baked. Hosumom removes the brown crust and grates the yellow interior. The rice dough is cooked, worked and shaped before the crumbs are applied. Preparing cake and rice dough separately preserves the loose crumb texture alongside the cohesive center, rather than baking them as one batter.
Changeok connects its version to gyeongdan. In Kurly’s direct interview, its planning team explains that adding pumpkin to rice-cake dough and coating it with bread crumbs developed from making those small rice cakes. Its research director notes the eggs in the castella coating and the importance of its combination with the dough. The brand identifies a particular product, not the entire category of pumpkin injeolmi.
Pumpkin injeolmi does not always have a castella coating. Cappuccino coats the pumpkin cake in soybean powder, emphasizing roasted bean aroma rather than an egg-cake-like crumb. Look for castella in the description if that is the version you want. It also differs from rice cakes filled with bean paste or fruit; consider both the coating and the dough.
Castella crumbs disperse softly first, followed by the rice cake’s elasticity. The crumbs alone feel loose, but with the cake they merge into a moist, cohesive bite. They do not form a hard shell like a fried coating. A piece that feels soft in the hand still differs from a cookie that breaks apart easily in the mouth.
Pumpkin is part of the rice dough, rather than merely a different coating on plain white injeolmi. Kurly’s Changeok listing identifies both pumpkin-containing rice cake and castella crumbs. Sweetness can come from pumpkin, sugar in the dough and the coating, so pumpkin in the name alone does not indicate sweetness intensity.
Working and cutting the cooked dough also affects its bite. Kneading joins the rice dough evenly, leaving tackiness at the cut surface. Crumbs adhere to that surface and help separate individual pieces. Tasting a heavily coated part together with a freshly cut face helps distinguish the crumb contribution from the cake’s elasticity.
Soybean-coated versions offer a different kind of nuttiness. Roasted soybean powder has a dry, subtle nut-like flavor; castella adds baked egg-cake aroma and soft crumbs. Both surround chewy rice cake, but the coatings do not taste the same. Even if you enjoy soybean injeolmi, the cake coating’s sweetness and baked aroma may stand out more in this version.
When it may suit the table
