Taste and texture
Doughnuts are sweet fried dough, often formed into rings or unpierced rounds with filling. Baked variations also exist, but fried-dough aroma with sugar or glaze is a familiar form. Looking separately at dough, coating and filling helps distinguish them beyond the colors and decorations in the display.
Yeast doughnuts rise through fermentation like bread. Susan Reid combines flour with yeast, milk, egg and butter, develops a smooth dough, then lets it rise before and after cutting and fries it. The interior is light and compressible. The same dough can form rings or unpierced rounds filled after frying.
Cake doughnut does not necessarily mean oven-baked. Brinna Sands’s old-fashioned recipe combines buttermilk, eggs and flour with baking powder and soda, cuts rings and fries them. This differs from yeast fermentation. The leavening and dough matter more than the ring shape when choosing between bread-like fluffiness and a denser cake-like crumb.
Baked doughnuts use another approach. PJ Hamel combines butter, oil, sugar and eggs with flour and milk, then bakes the thick batter in doughnut molds. The mold supplies the ring shape without deep-frying. A shared name and outline do not establish the cooking method, and baked does not by itself mean less sweet.
Kkwabaegi are a useful close comparison. Maangchi stretches and twists yeasted dough enriched with milk, egg and butter, lets it rise, then fries and coats it with sugar and cinnamon. Twisting replaces cutting rings. Sugar outside and a fluffy center are familiar, but pulling apart the twists offers another way to enjoy the dough.
Yeast doughnuts tend to be fluffy; cake doughnuts are denser and more substantial. PJ Hamel’s comparison distinguishes a thin shell and airy yeast interior from denser cake dough. Choose between a soft, compressible bite and a closer crumb to nibble. A matching ring shape or topping does not identify the interior.
Granulated sugar and a thin glaze finish the surface differently. Maangchi coats twisted doughnuts in sugar and cinnamon, while King Arthur Baking’s comparison dips doughnuts in a glaze mixed from confectioners’ sugar and liquids. Think of sugar grains touching the tongue versus smooth sweetness spreading. A doughnut without cream may still be quite sweet from its coating.
Filling adds another layer compared with an unfilled ring. Susan Reid gives raspberry-jam and Boston-cream examples, the latter combining pastry cream with chocolate glaze. Fruit-forward jam and smooth custard create different impressions in the same dough. A chocolate-colored top does not establish a chocolate center; check the filling too.
Small topping pieces matter as well. PJ Hamel’s baked recipe suggests toasted coconut or chopped nuts over glaze. These add something to chew beside the soft crumb and smooth coating. Look beyond decoration colors to notice ingredients such as nuts or coconut.

How to order it in Korea
- Beyond doughnut chains, neighbourhood bakeries and convenience stores carry them, and traditional markets often have stalls frying them on the spot.
- Look for yeast dough if you want a light, compressible bite, or cake dough for a denser crumb. Ask staff when the dough is not specified. Then check whether it is a ring or filled shape, and identify coating and filling. Separating shape, dough, exterior and center makes similar names easier to compare. Korean menus show these distinctions too. Dunkin lists glazed, Strawberry Filled and Boston Cream separately, while Knotted’s pickup list includes milk whipped cream, raspberry and vanilla-bean-glazed ring doughnuts. Names alone do not reveal the exact dough or cream formula. Check the branch’s description and selection before choosing.
