Taste and texture

Margherita is a Neapolitan-style pizza topped with tomato, mozzarella and basil. Its toppings are simple and its rim is puffy.

Margherita mainly identifies the toppings, while Neapolitan style also describes dough preparation, shaping and baking. The name alone does not guarantee identical thickness or edges everywhere. A Neapolitan version has a thin topped centre and raised rim, but tomato, mozzarella and basil can also sit on other dough styles. Toppings and crust format are separate menu information.

Traditional Neapolitan dough starts with flour, water, salt and yeast, then rests, is divided and rounded, and rises again. Air spaces in the rim come from the dough's expansion rather than a cheese filling. A tall edge need not be dense throughout like a close-textured loaf; its visible volume and chewing density are different qualities.

Hand shaping presses the centre outward while avoiding excessive pressure on the outer edge. This establishes the difference in thickness before baking, unlike rolling the whole dough evenly with a pin. A slightly irregular circle can still preserve the important contrast between a thin centre and a rim that retains air.

Recipes use crushed peeled tomatoes, purée, or pieces of fresh tomato; Margherita need not have a thick layer of heavily reduced sauce. Spreading tomato over the centre while leaving a bare rim separates the red topping from the bread edge. Retained tomato moisture makes the centre more moist than the uncovered rim.

Mozzarella can be distributed in pieces or strips rather than as a solid covering. Cow's-milk fior di latte and buffalo mozzarella are options, and draining wetter cheese affects the base's moisture. Gaps expose tomato, so some bites meet cheese first and others tomato, unlike a uniformly shredded cheese layer.

Tomato acidity meets milky mozzarella and basil aroma. Neapolitan dough has a thin, flexible center and a raised, springy rim. Its soft bite differs from a rigid, cracker-crisp pizza.

A Neapolitan rim has a baked exterior but a soft, elastic interior; the whole pizza is not meant to fracture like a cracker. The flexible centre can bend, so a drooping slice tip alone does not prove underbaking. The thin moist centre, expanded rim interior and heat-exposed surface create different textures within one pizza.

Basil is more than green decoration: bites containing a leaf bring herbal aroma between the tomato and cheese, while olive oil adds aroma and a smooth mouthfeel. Recipes add basil either before or after baking, so leaf colour and condition can differ. Heat exposure changes how the herb presents itself within the same basic topping combination.

High-heat, short Neapolitan baking differs from longer home-oven recipes. Home methods may preheat a stone or steel to heat the base and use upper heat for colouring. This helps explain different base dryness and rim surfaces with the same toppings. Margherita alone guarantees neither a wood-fired oven nor a particular baking time.

Freshly baked mozzarella meets moist tomato at the centre, while the bare edge shows more fermented, baked-bread flavour. Eating outward through a slice does not repeat the same taste: tangy tomato and dairy give way to the rim's baked aroma. Even with few ingredients, dough and topping remain distinct parts of the experience.

When it may suit the table

  • You are in the mood for tomato and cheese

When another path may fit better

  • You need to avoid dairy
  • You want a heavily loaded dish instead

How to order it in Korea
