Taste and texture
Hamburg steak is a shaped and cooked patty of minced meat mixed with ingredients such as onion, egg and breadcrumbs. Unlike a steak cut from a whole piece of meat, its ground-meat patty has a softer texture when cut. Rather than being placed in a burger bun, it is served on a plate with accompaniments such as sauce, rice and vegetables.
The patty may use beef alone or beef mixed with pork. A beef-heavy mixture has firmer bite and more pronounced beef flavour; pork adds fat, tenderness and springiness. Some methods sauté chopped onion to reduce moisture and develop sweetness, then cool it before mixing so the meat fat does not melt prematurely. Small onion pieces remain distributed through the cut patty.
Milk-soaked breadcrumbs soften and bind the mixture. Some recipes include egg; Kikkoman also gives an egg-free milk-and-breadcrumb formulation. Kneading meat with salt until sticky before adding the other ingredients helps the particles hold together. Passing or lightly tossing the mixture between the hands removes large air pockets before shaping an oval. A cohesive mixture cuts into tender pieces rather than separating into loose meat and crumbs.
The sauce can use the flavour left in the frying pan. Ketchup, tonkatsu sauce, butter and wine produce a tangy, sweet-savoury reduction; another formulation uses soy sauce, ketchup and garlic. Liquid releases the browned pan residue into the sauce. Reduction controls whether it runs thinly over the patty or clings more thickly. Sauce on a cut face accompanies more of each piece than sauce only on the exterior.
Nikomi hambagu is browned and then simmered in sauce. One version returns the patties to a mixture of beef stock, ketchup and Worcestershire sauce with sliced onion and separated shimeji mushrooms; sliced button mushrooms are an alternative. Compared with pouring sauce over a finished patty, meat and sauce cook together longer. Reduction coats the surface, while soft onion and springy mushrooms provide distinct bites alongside the meat.
A tofu version presses moisture from firm tofu, crumbles it and combines it with ground meat. Excess water makes shaping difficult. In an egg-and-tofu formulation without breadcrumbs, tofu disperses through the meat for tenderness; one sauce combines tomato passata, cream and soy sauce. Another variation uses okara with meat and soy milk, introducing fine soybean particles. Tofu or okara in the name does not establish a meat- or egg-free composition.
The meat patty is soft and moist. A rich sauce such as demi-glace adds savory flavor.
Some patties have a shallow central indentation to accommodate swelling during cooking. Browning both sides, then covering the pan to finish, combines a roasted surface with a moist interior; wine or stock may be added before covering. Repeatedly pressing the patty during frying can expel juices, so shaping happens before cooking. The cut surface contrasts a thin browned exterior with a cohesive, tender ground-meat interior.
Wafu versions pair grated daikon and shiso with soy- or ponzu-based sauce. Citrus acidity and the radish’s moisture differ from a rich brown sauce; finely grated daikon adds small particles and liquid, while shredded shiso supplies herbal aroma. Dashi or noodle-sauce bases are also used. Optional yuzukosho contributes citrus and chili heat. A visually light sauce can still be salty, and extra seasoning may make it spicy.
Wrapping cheese inside the mixture creates a melted centre revealed when cut, rather than a slice laid on top. Recipes use provolone or more pronounced cheeses such as cheddar and Gruyère. Mild, stretchy mozzarella can be combined with another cheese. The exterior remains browned meat, while the tender interior cuts together with molten cheese. A rich sauce adds another layer of seasoning alongside the meat and cheese.
