Taste and texture

Gratin is a technique in which a dish is topped with breadcrumbs, cheese or egg and then baked or cooked under an overhead grill until a browned crust forms. Shrimp gratin applies that method to shrimp and is often served in the dish it was baked in.

In a white-sauce shrimp gratin, béchamel made from butter, flour and milk surrounds the fillings. Mixing flour into butter and adding milk gradually helps smooth out lumps. The roux is kept pale rather than deeply browned. Optional cream adds richer dairy flavour. Once combined, the sauce links shrimp and vegetables with a smooth coating that lifts with them on a spoon rather than running away like broth.

Shrimp are peeled and deveined, with tails removed for spoon-eating or retained for presentation. Small shrimp can remain whole; larger ones may be cut to distribute pieces through the sauce. Sautéing and temporarily removing them prevents continuous cooking while the sauce is made. They receive more heat after assembly. The finished filling contrasts smooth sauce with the separate spring of the shrimp flesh.

A macaroni version folds separately boiled, drained short tubes into the sauce, which reaches their surfaces and hollow centres. Sliced sautéed onion becomes soft and sweet, while sliced button or cremini mushrooms remain distinct. Some recipes combine chicken thigh with shrimp, adding discernible meat fibres alongside springy seafood. The filling is more densely packed when pasta and meat join the shrimp.

Doria is a rice-based gratin variation with shrimp sauce over a rice layer. Examples use butter rice with onion and carrot or mushrooms, covered with béchamel, shrimp and cheese. Stock made by simmering and straining shrimp heads and shells can flavour the white sauce; water or chicken stock is an alternative when only peeled shrimp are available. Unlike thoroughly mixed pasta gratin, the sauce and rice can remain distinct layers.

A nagaimo-and-soy-milk variation thickens differently from flour-based white sauce. Some yam is grated and mixed with unsweetened soy milk and soy sauce; the rest is sliced, giving both a thick base and separate pieces. It is poured over shrimp, broccoli and bacon and baked with cheese. Seafood flavour, vegetable texture and salty smoked meat share the sauce. This particular soy-milk version still contains cheese and bacon.

The browned top is crisp while the layer beneath stays soft, and the flavor leans on cheese or breadcrumbs rather than heat.

Grated cheese and breadcrumbs can form separate toppings. Gruyère with Parmigiano-Reggiano combines melted richness with a firmer cheese’s salty depth. Crumbs are scattered over the surface to crisp rather than mixed entirely into the sauce. Overhead heat can brown this topping above an already prepared filling. A spoon passes through drier crumbs and melted cheese into moist sauce, combining the crust and soft interior.

A tomato-cream version combines tomato sauce and cream instead of plain white sauce. Kikkoman mixes sautéed onion and shrimp with that sauce, boiled macaroni and blanched, cut spinach, then bakes it under melting cheese. Tomato brings acidity and red colour into the cream while spinach leaves remain visible. The reddish interior can still sit beneath a golden cheese surface.
